What are lemon yellow, sunset yellow and carmine?

Edible tartrazine is an orange-yellow powder with a chemical composition of 3-carboxy-5-hydroxy-1 -(p-sulfenbenzene)-4-(p-sulfenphenyl azo) o-triazene sodium. The main raw materials for its production are p-aminobenzenesulfonic acid and tartaric acid. Slightly soluble in alcohol, insoluble in other organic agents. Sunset Yellow, also known as Edible Yellow No. 5 (Japan), Edible Yellow No. 3, Sunset Yellow, Orange Yellow, and Afterglow Yellow, has the chemical name 1-(4 '-sulfo-1' -benzoazo) -2-naphthol -6-sulfonate disodium salt. It is a water-soluble azo colorant, soluble in glycerol and propylene glycol, insoluble in oils, and almost insoluble in ethanol. The aqueous solution is a clear solution with a yellowish-orange luster. The coloring performance of sunset yellow is similar to that of lemon yellow. Carmine, also known as Edible Red 102 (Japan), Edible Red 7, Lichun Red 4R, Bright Red, and brilliant scarlet, has the chemical name 1-(4' -sulfonic acyl-1 '-naphthalenazo) -2-naphthalenol-6, 8-disulfonic acid trisodium salt and is an isomer of amaranth red. It is soluble in water and glycerol, slightly soluble in alcohol, and insoluble in oils. The aqueous solution is red. Carmine (Ponceau4R) is currently one of the most widely used and consumed monoazo synthetic pigments in China. The foods where the three types of pigments are allowed to be added and the amounts to be added Lemon yellow, sunset yellow and carmine are the colorants permitted to be added to food as stipulated in GB2760. The foods and large dosages of tartrazine, sunset yellow and carmine that are allowed to be added are shown in Tables 1, 2 and 3.
